Thank you everyone.  I appreciate your help in showing me the steps to correct this.  I will call her tonight, she does not live close enough for a face to face, and calmly demand my enrollments. 
I learned not to hand over my forms - even though she hounds you for them.  But I have a feeling I won't be doing any more classes with her so that shouldn't be an issue. 
I wish I would have found you sooner!  What a great group of friends, I am so happy you all are here.

If it was me I would handle it simply by making a list of everyone I had
worked with at the event and where I wanted them. I would call the
upline immediately and schedule a time to talk face to face. I would sit

her to email placements advising them that they were entered incorrectly

you have them call doTERRA or email placements. I would provide them
with something like this to send placements from the email address on
their IPC account:
Dear placements:
I went to an event and enrolled. When I did so I was introduced to
doTERRA and invited to the event by Jane Doe. When I filled out my
enrollment it was with the intent to enroll under her. I have since
discovered that the enrollment form was entered on the computer by
someone else who did not follow my wishes. I am hoping that you can
correct this error, please change my enroller to Jane Doe IPC# 1234 and
sponsor Jane Smith IPC#5678. Thank you.
I know confrontation is hard but if you just go in and do it calmly and
don't allow yourself to get upset or angry it will be fine. The hardest
part is making yourself do it. And remember when she lies (and she will)
just keep repeating. I need you to fix this and I need it fixed
immediately. She will lie, justify and try and convince you to do this
for the better of the team. It is not for the betterment of the team it
is for her advantage and it is stealing.
Never allow her to touch your enrollment forms again. I don't let anyone
enter my enrollment forms and neither does my team. The exception is
Diamond club and I watch those carefully and make sure they show up timely.
Regardless, I would go up the chain of command in your team and talk to
the Diamond above you and make sure s/he know what is going on. I
wouldn't be shy about letting your friends who also got taken advantage
of know too.
I can also tell you that she will keep doing it if you don't take action
and you will regret it later. I have many friends who have sat back and
done nothing and now are stuck dealing with the consequences.
A new enrollment can be moved once in the first 30 days and not after
that. She can transfer the enrollment to someone, however, it is where
they are and they do not move. As an example, I enroll Mary Smith and
place her under Jane Doe. Jane is an Executive. Then people are placed
under Mary by us and she has her own little leg. When Jane has met the
requirements to qualify for Silver I transfer the enrollment to Jane so
she can make her rank.
Yes if you are not the enroller you get nothing. If she is placed under
you after 60 days you get unilevel. Depending on where possibly it can
effect your power of 3.
