All I know is that is what I wrote down regarding what Dr. Pappas said in his class. If I look up the word essence in the dictionary this is what I found "an extract or concentrate obtained from a particular plant or other matter and used for flavoring or scent." 

If you have ever dropped a doTERRA essential oil on a napkin or paper you will notice that it does not leave an oily ring or mark after all of the oil has dissipated. If you do that with olive oil there will be a ring left. The chemical constituant make up is different. 

I am not a chemist. I can only try to explain what I thought he said and the quotation that I have from the class I attended. Still hoping this helps you.
